{"id":242,"date":"2022-12-21T17:19:14","date_gmt":"2022-12-22T01:19:14","guid":{"rendered":"https:\/\/vernon.mauery.com\/content\/?p=242"},"modified":"2022-12-21T17:19:14","modified_gmt":"2022-12-22T01:19:14","slug":"clam-chowder","status":"publish","type":"post","link":"https:\/\/vernon.mauery.com\/content\/2022\/12\/21\/clam-chowder\/","title":{"rendered":"Clam Chowder"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>3 6-1\/2 oz cans diced clams<\/li>\n\n\n\n<li>2 ribs celery (about 1 cup, diced)<\/li>\n\n\n\n<li>1 medium yellow onion (about 1 cup, diced)<\/li>\n\n\n\n<li>2 medium potatoes, (about 2 cups, 1\/2&#8243; cubes)<\/li>\n\n\n\n<li>1\/2 cup butter<\/li>\n\n\n\n<li>1\/2 cup flour<\/li>\n\n\n\n<li>1 quart half-and-half<\/li>\n\n\n\n<li>1\/2 tablespoon salt<\/li>\n\n\n\n<li>pepper to taste<\/li>\n\n\n\n<li>1\/2 teaspoon sugar<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Drain clams, saving juice.<\/li>\n\n\n\n<li>Chop the vegetables and put them in a 3-quart sauce pan. Add the clam juice and enough water to just cover the vegetables. Bring to a boil and simmer over medium heat until the potatoes are cooked, about 15 minutes.<\/li>\n\n\n\n<li>In a 6-quart stock pot, make a roux, cooking the butter and flour over medium-high heat until lightly browned, about 1-2 minutes. Add the half-and-half, whisking to remove lumps. Add the salt, pepper, and sugar, continuing to stir while simmering until smooth and thick.<\/li>\n\n\n\n<li>Add the vegetable mixture with the clam juice to the stock pot.
