Pumpkin Bars

- Preheat oven to 350°F
- Cream eggs, sugar, oil, and pumpkin. Beat until fluffy.
- Stir in dry ingredients and mix well.
- Spread in an ungreased jelly roll pan.
- Bake at 350°F for 25 to 30 minutes or until toothpick in center comes out clean.
- When cooled, make the frosting as follows.
- Mix cream cheese and butter.
- Stir in vanilla.
- Add powdered sugar, a little at a time.
- Beat well and frost.
Note: I like to have this as a birthday cake. To do this, we bake it as instructed in a jelly roll pan and then cut that in half to make two smaller rectangles. Then we make a two-layer cake out of it with frosting in the middle and all around. So yummy.
