The best banana bread ever. The nuts are not optional. More sour cream is advised. Even an extra banana won’t hurt.
- 1 1/2 cup sugar
- 3/4 cup shortening
- 3 eggs
- 1/2 tablespoon sour cream (or more)
- 1/2 tablespoon baking soda
- 1/2 tablespoon vanilla
- 1/4 teaspoon salt
- 4 large crushed bananas
- 3 cups flour
- 3/4 cup nuts, coarsely chopped
- Beat sugar and shortening together. Add eggs and sour cream and beat some more.
- Add baking soda, vanilla, salt and bananas and stir until mixed.
- Add flour and nuts and stir until mixed.
- Bake at 350°F for 1 hour in greased bread pans.
Makes two loaves.
